The short answer
A dishwasher runs 55–75 °C water for over an hour with detergent at pH 10–12. Keep out: cast iron and carbon steel (strips seasoning), bare and anodised aluminium (permanently dull grey), wood (cracks and delaminates), good knives (chipped edges, pitted steel), crystal (etches permanently), copper and brass, hand-painted or gold-trimmed china, non-stick (survives but ages faster), insulated flasks (vacuum seal), and any plastic on the bottom rack, where radiant heat from the element far exceeds the water temperature.
A dishwasher runs water at 55–75 °C for over an hour, with detergent at pH 10–12, sprayed at pressure, followed by a hot dry cycle. Hand washing is 40 °C water and near-neutral soap for two minutes. That difference is why “dishwasher safe” means an item will survive, not that the machine is good for it.
1. Cast iron and carbon steel
Prolonged water contact plus strongly alkaline detergent strips seasoning and causes rust. Cast iron is recoverable — scrub, dry, re-season — but there is no reason to create the problem.
2. Bare and anodised aluminium
Alkaline detergent reacts with aluminium and leaves it permanently dull grey and chalky. On anodised pans it strips the anodised layer outright. This is the most common irreversible dishwasher mistake in a kitchen.
3. Wooden boards, handles and utensils
An hour of hot water plus heat plus alkali. Boards crack, warp or delaminate — usually the first time. Laminated boards come apart at the glue lines.
4. Good knives
The blade survives; the edge does not. It chips against other items in the basket, and detergent pits the steel surface over time. A knife you sharpen is a knife you hand wash.
5. Crystal and fine glassware
Etches permanently — microscopic corrosion of the glass caused by soft water plus alkaline detergent plus heat. It looks like a film, but no product removes it because it is damage to the glass rather than a deposit on it.
6. Copper and brass
Discolours and tarnishes badly, and the finish does not come back with normal polishing.
7. Hand-painted and gold-trimmed china
Decoration applied over the glaze is worn off by detergent and pressure. Under-glaze decoration survives; over-glaze does not, and telling them apart usually means looking at whether you can feel the pattern.
8. Non-stick pans
Technically dishwasher safe on most modern pans, and it still shortens coating life significantly. Heat and alkali degrade PTFE faster than hand washing does.
9. Insulated flasks and travel mugs
Heat and moisture can breach the vacuum seal between the walls. Once that happens the flask stops insulating and there is no repair.
10. Anything plastic on the bottom rack
The heating element sits below the lower basket, and radiant heat there is far above the water temperature. Plastics belong on the top rack, without exception — warping is what eventually destroys the seal on a container.
The cloudy glass question
Two completely different causes, and they need opposite responses:

What the dishwasher is genuinely better at
For a full load it uses less water than hand washing under a running tap, and it sanitises more effectively. The rule that works: put in anything mass-produced and replaceable — everyday plates, glasses, cutlery, stainless pans, plastic storage on the top rack. Hand wash anything sharp, wooden, coated, aluminium, seasoned, decorated, or that you would be annoyed to replace.
Common questions
My pan says dishwasher safe. Is the label wrong?
No — it means the pan will not be destroyed. It does not mean the machine is good for it. Non-stick is the clearest example: dishwasher safe and still measurably shorter-lived than the same pan hand washed.
Why does aluminium go grey?
Dishwasher detergent is strongly alkaline and reacts with aluminium directly. The dull, chalky finish is the metal surface itself changing, so it is permanent. It is cosmetic rather than functional, but it does not come back.
Can I put a wooden spoon in?
It will survive longer than a board because it is a single small piece, but it will still dry out, roughen and eventually crack. Thirty seconds under a tap is not a meaningful saving.
How do I tell if my china is safe?
Run a finger over the pattern. If you can feel it, the decoration sits on top of the glaze and the dishwasher will wear it off. If the surface is completely smooth, it is under-glaze and generally fine.
Is the top rack really that different?
Yes. The heating element is under the bottom basket, and radiant heat there exceeds the water temperature considerably. Nearly every warped plastic container was on the bottom rack.
